Dec 5.


This morning a hearty breakfast, 2 small snacks today and for dinner smoked turkey breast. Best part about making a large amount is that it starts meal prep for the week!

Day 23: fajita

Made fajitas for dinner. Yum yum. 

Day 24: Dessert

Tonight's dessert is a freshly cut pear. 

Final Saturday Brunch

As the portion plate project phase 1 comes to a close today's meal Turkey Sausage Egg White Scramble with (1/2 Cup jalapanos, red/green peppers, Avacado, onion) excited for tomorrow's Final Meal of our project! 

Day 21 Dec 4

Well since my phone was not working I couldn't take a picture of my dinner :(
I made corned beef cabbage potatoes and carrots...my oldest really want us to go to McFarlands for dinner to get our Irish grub on and to stay on point not eating out I opted to make this meal for her and she was happy...

Running and no time...

I've decided I'm not planning well enough in advanced for days where fires need tone put out at work and there isn't time for slowing down. 
Dec 4 I found myself eating trail mix in a Baggie from my car. On the positive, it's a homemade mix I made with almonds, cashews, pomegranate dark chocolate pieces, raisins and peanuts... (I don't like the M&mms so I eat around them). The downside was that I felt hungry all day. 
I finally sat down to dinner in Omaha for tilapia and asparagus. Being that I didn't have a chance to stop at home, no portion plate was used, but I still maintain my smaller portions and awareness.

Today's Brunch

Who said you could only have brunch on Sunday's!  Today I am having Ground Turkey Egg White Skillet w/tomatoes, green peppers, avacados and a tbsp of sour cream! Using one of the amazing bowls created for our project as this phase of our project comes to an end! #portionplateproject

Busy Can Impact Your Life

I don't know who they are but they say that when life gets busy your health, habits and priorities are impacted. Since my last post on November 24, all of the above is true for me. Whats different is my health (unlike in the past) continued on path to optimal health and eating habits but my obligation to our project suffered. I have still been using the dishes and have now become a norm for me and tracking my portion and health during the project. As we move to the end of "PHASE 1" of the project I am excited for what I have learned and been able to share. These next three days as we move towards our final project meal I will have ideas, recipes, meals, and things we can do to continue developing amazing habits. Day 22: December 3

Today at work I sat on the floor, as you can see, and I ate leftovers from Monday. (for recipie see day 20: November 30)

Yesterday, Today, tomorrow...

I'm still setting daily goals to use my portion plates. I'm still focusing on positive steps, working out and keeping up with my transformational changes. 

Breakfasts are my standard power shake.
We are still using Thanksgiving leftovers. Today, turkey salad in multigrain pita. Yummo!

Today was fun, again my power shake for breakfast.
Dinner was chicken and spinach lasagna, and dessert was coffee and French silk pie. 
We all need a cheat night sometimes :-) 
The difference I'm seeing is that I know I'm watching what portions I eat and more importantly taking care of my body with rest and exercise. 
I'm looking forward to tomorrow and the next day and day after that. Life is good.





Day 22: My bowl broke :(

My large bowl has a crack in it and I'm really sad. I can still eat cold things out of it but I'm afraid to do much else. 

Today for lunch I had a small bowl of mixed fruit: strawberries, blueberries and grapes. And then I had one of my favorite easy salads: tuna, avocado, cilantro, onion and lime. 

Day 22: December 3

The last few days have been frantic work days... And nights just eating anything edible that entered my work space. Today for lunch, back on track, panini with honey whole wheat bread from Great Harvest. Tomato bisque soup from Leah! Dessert is pomegranate... Love them! Eaten with a friendly Time magazine.

Love my protein filled ViCereal along with half a banana, topped with ViBerry tri-puffs.  Looks very festive!

Lunch today at work with my clients and coworkers. Same recipe as day 19: November 30, except heated up in microwave.

Day 21: Raviolies

Dinner tonight was a pasta dish that consisted of raviolies, pasta sauce and cheese.

Sometimes breakfast is the best dinner...simple quick and easy...scrambled eggs, has brown, sausage links and bacon...I made enough that every body did not need seconds, satisfied! Forgot to take a picture:(

The past week has been a blur of preparing and feasting, family and friends. I was definitely tested and can honestly say my eating habits have changed and don't believe I will ever go back. 
I consider not only what I'm eating now, but how will it fit or look with my portion plates. I visualize my meals before preparing them and adjust them however I can to add color or make them a bit healthier and consider my whole day and not just a meal.

Day 21: December 1

Homemade rhubarb pie for lunch...yes lunch. I need to make more time for myself in the morning or evening before to prep a lunch. This pie was leftover from thanksgiving. The whole thing made from scratch by my sister and the rhubarb homegrown from my parents. I usually prefer it with strawberries but I can't complain. :) 

Day 14,15,16,17,18,19 Nov 23-27

🙁I forgot to pack my potion plates to take to my parent...even though I did not have my portion plates I can visualize the plates and portion my food accordingly...I made sure I kept my water intake... Since it was just my parents my little family there wasn't an over abundance of food.. My mom being diabetic it helps with what is being prepared...coming home on Day 18 (Saturday) I could of easily went got take out or go thru a drive thru but I didn't...as usual something quick and easy, steamed rice, kimchi and roasted seaweed...Day 19, made lasagna and salad...

Day 20 Dec1

Tonight's menu upon request from my minions was sloppy joes...Normally I use the sloppy joe packet to flavor the beef...but I decided to step it up and make it from scratch..it turned out great and the minions ate it up...broccoli with Klamata olive hummus was a great add...yum yum!!!!
